I made these last summer, and with selling a house / buying a new one and starting grad school I never had time to post the recipe.  Things have calmed down a bit, so I’m hoping to post all of my back-logged recipes and then actually photograph some new ones!

time: close to an hour, probably

 

Green Cashew Sauce Ingredients

  • 1/4 cup fresh cilantro
  • 1/4 cup fresh basil
  • 1 cup cashews
  • 1/3 cup canned coconut milk
  • 2 limes
  • 3 teaspoons Thai red curry paste
  • 2-4 tablespoons sweet thai chili sauce (I used 4 tablespoons)

 

 

 

Mango Slaw

  • 1 mango, peeled and sliced into thin strips
  • handful of shredded carrots
  • 1 cucumber, sliced into matchstick sized pieces
  • 1 red onion, thinly sliced
  • 1 red jalapeno pepper finely chopped
  • 1 lime

 

 

Meatball Ingredients

  • 1/2 pound ground pork sausage
  • 1/2 pound ground hamburger
  • 2 tablespoons sesame oil
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons fish sauce
  • 3 tablespoons honey

 

Accoutrements

  • 1 head butter lettuce
  • 1/2 cup sweet thai chili sauce, for dipping
  • toasted cashews

Green Cashew Sauce Directions

Step 1: Place the cilantro, basil, cashews, coconut milk, lime juice, Thai red curry paste and sweet thai chile sauce to a food processor.

Step 2: Blend until smooth and creamy.

Step 3: Add more of the ingredients if needed.

 

Mango Slaw Directions

Step 1: Combine the mangos, shredded carrots, matchstick cucumbers, thinly sliced red onion, jalapeno, and fresh lime juice.

Step 2: Mix well.

 

Meatball Directions

Step 1: Mix the two meats together well.

Step 2: Roll into small balls.

Step 3: Cook the meatballs thoroughly.

Step 4: Stir together the sesame oil, soy sauce, fish sauce, and honey.

Step 5: Add the cooked meatballs to the sauce

 

Put it all together

Step 1: Place the meatballs, cashew sauce, mango salsa, and toasted cashews on a washed piece of lettuce…enjoy!!

Rice Noodles with Shrimp & Cashews

Chilli Cashew Shrimp Noodles (52) WM

Serves: 4

Time: 25 minutes

Ingredients:

one package uncooked rice noodles
2 tablespoons honey
2 tablespoons fish sauce
1/4 cup soy sauce
1/4 cup hoisin sauce
1 lime, juiced
2 tablespoons peanut oil
1 pound raw shrimp, peeled and deveined
1 clove garlic, minced
4 red chillies, chopped
1 red bell pepper, sliced
1 cup whole roasted cashews
3 green onions, chopped
1/4 cup fresh cilantro, chopped

 

 

Chilli Cashew Shrimp Noodles (36) WMDirections:

  1. Boil a pot of salted water, and cook the rice noodles according to package directions (don’t overcook as they will continue to cook in the sauce).  Drain and rinse the noodles in cold water.
  2. Combine the honey, fish sauce, soy sauce, hoisin sauce and lime juice.
  3. Heat a large skillet over medium-high heat.  Once the pan is hot spoon in half of the peanut oil, dump in the shrimp after the oil has gotten a tad bit warm.  Cook the shrimp until they are cooked through, then remove them from the pan.
  4. Add the other tablespoon of oil, the garlic, red chillies and red bell peppers; saute for about 3 minutes (you want the red bell peppers to still be crunchy).
  5. Add the cashews and stir fry for about a minute.
  6. Add the sauce and the shrimp to the vegetables then cook for another minute.
  7. Add the noodles and cook for about 3 minutes – stir until all of the ingredients are well combined.
  8. Scoop out the noodle mixture and place on individual plates, then top with the chopped green onions and cilantro.

Soba Noodles with Chicken & Ginger Sauce

This is the first time that I have had soba noodles – I found them in the freezer section of the Asian market in town.  They are buckwheat noodles that are about the diameter of spaghetti noodles.  I will definitely be using them in another recipe, it’s great to use another noodle that is just slightly different that the norm (for me at least).  I really liked this recipe, and as usual made some modifications from the original…it’s not truly my recipe until I do that 🙂

serves 4

marinate for several hours, overnight if possible

soba noodles (3) WM

chicken marinade

1 tablespoon chili garlic sauce

1 tablespoon soy sauce

1 tablespoon Golden Mountain Sauce

sweet ginger sauce

1 tablespoon sriracha

4 tablespoons sesame oil

2 tablespoons soy sauce

2 tablespoons Golden Mountain sauce

2 tablespoons rice wine vinegar

2 tablespoons honey

thumb size of ginger, minced

1 lime, squeezed

for garnish

green onions, diced

cilantro, chopped

cucumber, julienne

sesame seeds

Directions:

  1. Mix all the ingredients for the chicken marinade and let sit for a few hours, over night if possible.
  2. 10 -15 minutes before you are ready to start preparing the chicken & soba noodles mix all of the ingredients for the sweet ginger sauce.  Set aside.
  3. Slice all of the vegetables.
  4. Boil the soba noodles per the instructions on the package.  If they finish cooking before the chicken drain and cover.
  5. Remove the chicken from the marinade and cook until no longer pink.
  6. In a large skillet add the sauce, cooked chicken, and soba noodles and toss well.  Serve onto individual dishes and sprinkle with the vegetables and sesame seeds.

Pasta Rosa Verta

This was a really simple meal to make, and took maybe about half an hour to make.  I really need to get better at timing how long my meals take so that I can tell you.  I really liked the flavors of the standard diced tomato sauce with the arugula, pine nuts and blue cheese – I will certainly be making this dish again!  I hope you enjoy it as much as I did!  If you make it let me know what you think – I love comments!

Pasta Rosa Verde (15) WM

serves 4

Ingredients

1 box penne pasta

4 hot Italian sausage links

olive oil

1 onion, thinly sliced

2 garlic cloves, minced

1 can diced tomatoes

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper

3 cups arugula, watercress, or spinach (I used arugula)

1/4 cup toasted pine nuts

2 tablespoons crumbled Gorgonzola or other blue cheese

Directions

1. Cook the pasta according to package directions.  Drain and cover to keep warm.

2. Boil the sausage links for about 12 minutes, drain the water and slice into bite sized pieces.

3. Heat the olive oil in a large skillet over medium heat. throw in the the onion and garlic and saute until the onion is tender.  Stir in the canned tomatoes, salt, pepper, and red pepper, add more to taste.  Add the cooked sliced Italian sausage.  Continue to cook for about 5 minutes.

4. While the tomato & sausage mixture is heating, toast the pine nuts until lightly browned.

5. Mix in the arugula, watercress, or spinach into the tomato & sausage mixture and heat until just wilted.

6. Spoon the pasta onto individual dishes and top with the tomato mixture.  Sprinkle with the toasted pine nuts and crumbled cheese.

Garden Raviolis

Someday I am going to make raviolis from scratch, but until then I’ll buy them pre-made.  This is a great recipe because it takes pre-made fresh raviolis, doesn’t dump a bunch of sauce on them and instead uses oh so fresh summer veggies.  What more could you ask for.  Really.

prep time: approximately 7 minutes

cooking time: approximately 35 minutes

Ingredients:

1 bag pre-made fresh cheese raviolis (the size depends on how many people are eating)

1/2 container cherry tomatoes

2 shallots, cut into wedges

4 garlic gloves, peeled

1/2 zucchini, sliced into bite sized pieces

olive oil

salt

pepper

fresh basil

grated cheese (if desired, it was kind of overkill considering the cheese raviolis, I’ll skip next time)

Directions:

1. Place all vegetables onto an oiled baking sheet in a pre-heated 425 degree oven and bake for about 30 minutes.

2. Meanwhile, boil water for the raviolis and cook.

3. After the raviolis are cooked and the veggies are done combine in a pot with the fresh basil leaves and gently stir together.  Add more olive oil if the ravioli are sticking to one another.  Add salt and pepper to taste.
