potato gratins5I made these muffin pan potato gratins to go along with my cast iron chicken thighs.  They are just potatoes that are a little spiced up and baked in muffin tins but they are so much fun and so tasty!

You will need:

2-3 small potatoes (I used red)

1/4 teaspoon salt

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 teaspoon pepper

butter

heavy cream or milk

To make:

1. Preheat oven to 400 degrees

2. Combine the seasonings together in a little bowl; slice the washed potatoes as thin as you can possibly manage.

3. Place 3 slices of potatoes in each muffin tin, sprinkle a little of the seasoning mixture over the potatoes.  Add 3 more slices, place a tiny piece of butter over the potatoes and sprinkle more seasoning mixture.  Add 3 more slices and season; continue until the potato stack is a little higher than the top of the muffin tin.

4. Pour heavy cream or milk over each potato cup – you don’t want it overflowing, but you do want to see the milk or cream.

5. Bake for 25-35 minutes until the potatoes are soft, and the tops are brown.

  1. oh, these sound easy and fun! the boys will like that they are little 🙂

    FYI; I made your quinoa salad, with olives. I didn’t have any artichoke oil, so I was trying to be creative, and added a little bit of truffle oil (go figure). Oh my gosh, did that little bit of oil take over… argh… so I added about 4 times the amount of olives to try to make it better.. oh dear….oops.. guess I won’t do that again.. not my fave… oops…
