baked chicken taquitos

I made these healthy little appetizers for our holiday party this past weekend.  Unfortunately, I forgot to take a picture of the finished product (the tortillas were a nice golden brown).


flour (or corn) taco sized tortillas – I thought one was too big so I cut each tortilla in half

(1) package chicken breasts

shredded cheese



chili powder

garlic powder

onion powder

Bring a medium sized pot of water to a boil; sprinkle in the seasonings, add the chicken and boil for 5 minutes then turn the heat to medium-low.  Gently boil the chicken for about 10 more minutes until just done.  After the chicken has cooled and can be touched pull apart the chicken; sprinkle all of the seasonings on the cooked meat. Cut the tortillas in half, fill partially with the shredded chicken & shredded cheese and then tightly roll.  Place each taquito seam down on your cookie sheet.  Spray the rolled taquitos with olive oil, and bake in a 350 degree preheated oven for roughly 30 minutes.  Serve with salsa and sour cream.
