pear, goat cheese and pancetta

Are you looking for a quick yet amazing appetizer?  Look no further.  I just made this for my book club tonight (I’m sure they will love it! I know I did, I couldn’t stop eating these little pieces of heaven!).  My oven is currently broken – the new one is coming tomorrow! yay and thank god because it’s Thanksgiving next week! – so I had to make something that didn’t require baking (except for my toaster oven).  I also had a log of goat cheese, and after googling and looking at quite a few yummy goat cheese recipes I settled on this one:

The ingredients aren’t many, and the time to assemble isn’t much.

You will need:

goat cheese (I used about 1/3 of the log)

1 pear (I used an Asian pear) sliced thinly and cut into bite sized pieces

honey – to taste (I probably used about 2 tablespoons)

pancetta crisped in an oven or toaster over (and I also used prosciutto to mix things up a little but did not crisp it)

I mixed the honey with the goat cheese instead of dribbling on top of the bite sized delights as the recipes I found did, because, well, I felt like it.  I put the meat down and then the cheese/honey mixture on top of the meat but ended up flipping the cheese to touch the pear, which secured the meat & cheese better.

That’s it!  I told ya it was super simple!
