goat cheese bites

The moving is done and unpacking has begun!!  I thought that I would be way further along in the kitchen that I really was so I invited a few girlfriends over to celebrate Halloween old lady style (eat dinner, drink wine, and pass out candy to the kidos).  I was going to make this fantastic looking potato soup, but since my kitchen wasn’t quite ready served up some yummy boxed tomato soup with baked french bread sliced and topped with cheddar cheese.  My friend brought over these amazing goat cheese, honey, lemon zest, blackberry and mint puff pasty bites.  They were so good!  They are very simple to make, and they will be on my list of potluck foods.

Ingredients:

goat cheese

honey – to taste

lemon zest – to taste

blackberries

mint

puff pastry

Directions:

Cut the puff pastry into bite sized pieces and place on a parchment paper lined cookie try.  Mix the goat cheese, honey and lemon zest.  Put a dollop on the bite sized puff pastry.  Place one blackberry on top of the goat cheese mixture. Bake in a pre-heated 400 degree oven for about 10 minutes.
