a few fresh summer salads

This summer I was busy making light, fresh, and flavorful salads.  Sadly I only remembered to take pictures of just a few of them.  Here they are:

watermelon, arugula, beet & cheese salad

I first had a salad of this type at a restaurant in Boston right by the Commons – I can’t remember the name of the restaurant for the life of me but I will never forget how fresh and wonderful the salad was.  Years later I decided to make a similar salad and was not disappointed.

Ingredients:

arugula

beets (canned or fresh – baked of course)

watermelon

soft goat cheese

olive oil

balsamic vinegar

salt, pepper

can also add: toasted or candied walnuts, baby mozzarella cheese

layer the ingredients; mix the olive oil, balsamic vinegar, salt, and pepper together and then pour over the salad

orzo caprese

Super simple to make!!  This salad incorporates the caprese salad adding cooked orzo.  It does not save well, so eat up (that won’t be a problem though!)!!

Ingredients:

1 cup dry orzo

1 large ripe tomato, or baby tomatoes

buffalo mozzarella

fresh basil

olive oil

balsamic vinegar

salt, pepper

After cooking the orzo, combine the other ingredients & serve!  This recipe will serve about 4 people.

bean & corn salad

Here is another fantastic summer salad that is super easy to make!

Ingredients:

1 can pinto beans (drained & rinsed)

1 can black beans (drained & rinsed)

1 can whole corn (drained & rinsed) or 2 ears of corn cooked

green onions

tomatoes

cilantro

avocado

salt & pepper

combine all ingredients, salt & pepper to taste, place spoonful of avocado on each serving/plate.
